The smash is an old drink format that I have always really enjoyed. They make for great drinks that are clean and cooling. This one has a great herbal anise note that is mellowed in a very pleasant way with a nice underlying tone of mint.

1/2 sliced lemon
1/4 ounce orjeat
1 ounce Tempus Fugit Creme de Menthe
1 ounce Herbsaint Legendre
crushed ice and mint

Add the sliced lemon and orjeat into a shaker tin. Muddle hard to release the oil from the peel. Add in Tempus Fugit Crème de Menthe and Herbsaint Legendre. Pack a double old fashioned glass with crush ice. Add ice to the shaker tin. Give the tin a hearty shake. Pour through a Hawthorne and a tea strainer into the double old fashioned glass. Use a bar spoon to pack the ice, adding more ice as needed to fill up the glass. Lightly flap a mint sprig against your palm to release the aroma. Place the mint and two straws in the drink.
